DISTINCTIVE QUALITIES: Fresh winter white truffles from Italy (Tuber Magnatum Pico) are available only from October-December. Also called Piedmont, or Alba truffles, these wild Italian truffles are treasured for their intense aroma and earthy flavors that resemble the chestnut, oak, or hazelnut trees from which they grow beneath. The firm flesh presents itself in beautifully marbled tones of ivory, cream, and light caramel.
This decadent treat can be paired with almost any dish to elevate its status. You can thinly shave truffles over pasta, risotto, or carpaccio. Infuse them with butter and drizzle over mashed potatoes for a Michelin star experience at home.
BEHIND THE PRODUCT: Specially-trained dogs have replaced this career that traditionally once belonged to pigs. This is because the pigs naturally devoured too many of their finds!
What are White Truffles?
White Winter Truffles, referred to as Piedmont Truffles or Alba Truffles, are seasonal truffles harvested from September to December in the forests of Alba, surrounding Piedmont, a Northwestern region of Italy. Tuber Magnatum is the specific species of truffle in the family of Tuberaceae.
What do White Truffles Taste Like?
White Winter Truffles have a taste similar to black truffles however with a distinct and earthy and aromatic and slightly ‘spicier’ than its black truffle counterpart. With tones of nuts, forest floor, and sweet oak, the flesh of the white truffle is meaty and dense, much like a traditional mushroom.
How rare are White Truffles?
White Winter Truffles are extremely rare and are rarely harvested in bulk due to its seasonal growing conditions and difficult nature to forage and handpick from the forest.
COUNTRY OF ORIGIN: Italy (Umbria and Alba regions)
SERVING SUGGESTIONS: Never cook truffles! Thinly shave, or grate over a warm dish such as risotto, pasta, or eggs. The radiant heat of the dish is just enough to enhance the fresh flavors of white truffles.
